Shrimp Fettuccine


When you live here in Portugal you'd better like sea food. For example shrimps, you can have it as a starter, which I love to do or as a main course (but in this case you might want to ask for something more, because by itself it might not be as filling). I went to an Italian restaurant not long ago and I ordered a shrimp fettuccine, because I wanted to eat something Italian, like a pasta, but have a little sea food in it, since I am in Portugal. This dish perfectly suits my taste. It had a creamy sauce with rucola and just enough garlic (if it is too garlicky it can ruin the whole dish) and the shrimp was perfectly cooked. Then I thought I could probably recreate this pasta at home, so I can make it for my family, but first and foremost I can eat it whenever I want to. :) If you like your pasta a little bit exotic or just love shrimps, then this is the perfect choice for you too. I think this dish is also great, because you can present it really fancy and make your guests or family feel like they are in a restaurant.

INGREDIENTS:
250g fettuccine pasta
200g pre cooked and peeled shrimps
2 tbsp butter
2 cloves of a garlic
rucola (the amount that you prefer)
4-5 tbsp of grated parmesan
150ml cream
salt, pepper
(makes 3 servings)


Cook the pasta in salty boiling water. Put 1,5 tablespoons of butter in a big pan and add the shrimp and the garlic and fry until the shrimps are pink (but do not over fry!). Chop up some rucola and add that to the shrimps and add the cream as well. Let that fry for 2 minutes while stirring once in a while. Season it with salt and pepper and add the grated parmesan. Pour the pasta in the pan, mix it together with the sauce and let it fry for 2 more minutes. Serve it on a plate with rucola and parmesan on top and you are done and ready to eat!

Salmon and Chicken Wrap

Wraps are among my favourite things to eat, because you can really put anything that you like in them and they taste amazing. I usually eat lunch at home twice a week and that is when I like to make myself something filling but healthy. Most of the time I make  either a chicken or a salmon wrap. They are different but both of them taste really good. I like the chicken one, because I put tomato sauce in it and it tastes great, and I like the salmon one, because I LOVE salmon! :) You can use other ingredients too, but it is very important to put crispy fresh salad with it.
I want to share with you these recipes so you can also make them when you want to have a quick lunch or dinner.

Chicken wrap:
half a breast of a chicken
chicken spice (any kind prefer) 
1 wrap
1-2 tablespoons of tomato sauce
3-4 cherry tomatoes
1 slice of cheese (or just grate some on top)
some salad
some mushrooms

Salmon wrap:
1 slice of salmon
1 wrap
half of an avocado
lemon (juice)
some salad with arugula 
cheese
3 cherry tomatoes
1 tablespoon of cream fresh (tejföl) (this is optional)

Chicken wrap:
First, cut your chicken into little chunks, then fry them in a pan in some oil and spice. Get your wrap and spread the tomato souce and then add the chicken, tomatoes, salad, mushrooms and cheese (you can use any kind of cheese, I used parmesan). Roll it up and my tip for you is if you're not going to eat it right away, then put a toothpick in the center so it holds the wrap togehter and when you are ready to eat just take it out.

Salmon wrap:
Take the wrap and spread some sour cream on it and add the salmon and the avocado and sqeeze some lemon juice on them. Then add the salad, cheese, tomatoes and roll it up and you are done.

You can use any other ingredients that you would like for these wraps. Enjoy!

Easy and tasty appetizers

Before your guests arrive you make the soup, the main course and you definitely put time and effort into making the dessert. But there is always that question: what treat should I greet them with? You don't want to give them something that fills them too much, but everyone likes to eat a little something with their welcome drinks. For this week I decided to show you two easy and tasty appetizers. If you are in a rush this is perfect because these are ready in no time and they look like you've put a lot of effort into making them. 


1st sandwich 
2 slices of brown bread (with sunflower seeds)
olive oil
7 cherry tomatoes
2 cloves garlic
basil
salt and pepper
(it makes two bread slices)

Toast the bread slices and drizzle some olive oil on top of them. Heat some olive oil in a pan and fry the chopped garlic cloves until they are a bit brown and then add the sliced cherry tomatoes and the basil. Let them fry until the tomatoes become soft and then season it with salt and pepper. Put it on top of your bread and put a basil leaf on top of the bread for decoration.

2nd sandwich
2 brown bread (with sunflower seeds)
olive oil
2 slices of salmon 
arugula (rukkola)
almond (peeled and sliced)
(it makes two bread slices)

Toast the bread slices and drizzle some olive oil on top of them. Put one slice of salmon on each bread and then squeeze some lemon juice on top of it. Add the arugula and also some peeled and sliced almond on top.

Healthy and delicious salad

Like every girl I like to watch my figure at times, this is when I don't want to eat a heavy meal. On those occasions I like to eat a salad, but I don't like to feel that I give up on a tasty dinner, so instead I try to make my salad delicious with some tricks. I'm going to give you one of my favourite salad recipes with two different dressings. I usually make this salad when I don't want to spend too much time preparing it, otherwise I'd make a caesar salad but of course that takes more time. I believe that if you are on a diet or just eat healthy, you don't have to compromise, because you can spice up a boring diet dish with some delicious ingredients. 

INGREDIENTS:

For the salad: 
200g lettuce
30g arugula (rukkola)
30g spinach leaves
12 cherry tomatoes
250g mozzarella or other cheese
5g (a few slices) ham 
1 cucumber
30g almond (peeled, sliced)
grated parmesan

1.Dressing:
50 ml olive oil 
10 ml freshly squeezed lemon (can be replaced by 20 ml fine vinegar)
1 teaspoon mustard
salt 
pepper 

2. Dressing:
30 ml olive oil
1 teaspoon of mustard
2 tablespoons cream fresh (tejföl) 
1/2 teaspoon worcester sauce ( can be replaced by fine vinegar)
salt
pepper

Get a big bowl and put the lettuce, arugula, spinach leaves, cucumber and cherry tomatoes in it. Then slice your mozzarella and ham and put those in the bowl as well. 

1.dressing: Pour your olive oil and lemon juice in a small bowl or glass. Then add the mustard and finally season it with salt and pepper.

2. dressing: Pour your olive oil and add your mustard, cream fresh and the worcester sauce in a small bowl or glass. Season it with salt and pepper.

Put the dressing on your salad and mix well.
Serve it on a plate and put the grated parmesan and some almonds on top of your salad and don't forget your choice of dressing.
