Shrimp Fettuccine


When you live here in Portugal you'd better like sea food. For example shrimps, you can have it as a starter, which I love to do or as a main course (but in this case you might want to ask for something more, because by itself it might not be as filling). I went to an Italian restaurant not long ago and I ordered a shrimp fettuccine, because I wanted to eat something Italian, like a pasta, but have a little sea food in it, since I am in Portugal. This dish perfectly suits my taste. It had a creamy sauce with rucola and just enough garlic (if it is too garlicky it can ruin the whole dish) and the shrimp was perfectly cooked. Then I thought I could probably recreate this pasta at home, so I can make it for my family, but first and foremost I can eat it whenever I want to. :) If you like your pasta a little bit exotic or just love shrimps, then this is the perfect choice for you too. I think this dish is also great, because you can present it really fancy and make your guests or family feel like they are in a restaurant.

INGREDIENTS:
250g fettuccine pasta
200g pre cooked and peeled shrimps
2 tbsp butter
2 cloves of a garlic
rucola (the amount that you prefer)
4-5 tbsp of grated parmesan
150ml cream
salt, pepper
(makes 3 servings)


Cook the pasta in salty boiling water. Put 1,5 tablespoons of butter in a big pan and add the shrimp and the garlic and fry until the shrimps are pink (but do not over fry!). Chop up some rucola and add that to the shrimps and add the cream as well. Let that fry for 2 minutes while stirring once in a while. Season it with salt and pepper and add the grated parmesan. Pour the pasta in the pan, mix it together with the sauce and let it fry for 2 more minutes. Serve it on a plate with rucola and parmesan on top and you are done and ready to eat!

Guincho salad

There is this perfect little café which looks over my favourite beach, Guincho. We go there so many times, because there is nothing better than drinking a coffee, eating a croissant while you're watching the ocean.
I'm on a school break now, so I have time to relax and just enjoy living in Portugal and being with my family. And so the other day I went to this café with my family and I decided to show you guys how amazing this place is.
There is a salad which I love to order, because it is unique, tasty and also filling. I had this many times and the last time I went I wrote down all the ingredients I tasted, so I could try to recreate at home. The next day I made this salad and I think it turned out pretty great.
With this recipe I'm only going to give you the ingredients and how to make it, because I feel like with salad recipes you don't exactly need the measurements, because all depends on you're taste.

SALAD INGREDIENTS: 
chicken breast
curry
salad mix
coriander
couscous
apple

FOR THE DRESSING:

olive oil
cinnamon
curry
lemon

Season the chicken with salt and pepper and fry it in a pan with some oil and curry. Add your salad mix, peeled and sliced apple, couscous (which you've cooked according to the instructions on the box), coriander and the fried curry chicken into a bowl. For the dressing mix the olive oil, salt, pepper, curry, cinnamon and some lemon juice in a glass and drizzle it on the salad. The good thing about salads is that if you forget something you can always add it later.

Hungarian Smarni

Back home I see my grandparents almost every day, but since we live so far away from them now we can only talk on the phone, skype or if they visit us. When I don't see them for a long time I miss them, I miss talking to them, eating all the delicious food my grandmother makes for us, talking to them, watching movies together...
I was so excited when they told me that they are coming to see us. I was counting the days with my sister. They have been here for nearly two weeks now and we have done so many things and one of them was that I made Hungarian "smarni" with my grandmother. Originally, this is an Austrian dish regularly made by Hungarians too, just a little differently. We like to eat this with apricot jam (which is also home-made by my grandmother) and it is heavenly !! 

INGREDIENTS
10 dkg semolina (búzadara) 
2,5 dl milk 
3 eggs
pinch of salt
orange zest
lemon zest
4 tbs of oil

optional:
caster sugar
raisins (mazsola) (the amount you prefer)
apricot jam


Start by separating the egg whites from the egg yolks. Mix the semolina, the milk and the egg yolks in the bowl, and let it sit for minimum an hour.  Pour some milk on the raisins in a cup (until it covers them) so they can soften. Beat the egg whites with a pinch of salt and add to the batter. Heat up 4 tablespoons of oil in a big pan, and pour in the batter (but make sure to turn it down to medium heat when you start frying the batter). Let one side fry like a thick pancake and then start folding it in half, and cutting it to little pieces with a wooden spatula. Repeat until the batter falls into little crumbles and get golden brown. When ready, grate some lemon and orange zest on it and also add your softened raisins. When it is done put it on a plate and optionally add a little bit of caster sugar on top (this is how I prefer this to be served) and also the apricot jam.









My grandparents are leaving soon and I am sad, because they have to go back to Hungary, so I won't see them for a while, but I am also happy, because it was so nice to see them and spend some time together.

Carbonara

There are so many times when I want to eat something filling but I'm too lazy to spend lots of time in the kitchen. These times I make an easy carbonara pasta, just like I did this weekend. I was tired from my week at school and I just wanted to eat something delicious so I made this quick and yummy dish. This pasta is also my little sister's favourite so she was more than happy when she came in to the kitchen and saw what I was making for lunch. 
I actually don't like this pasta in restaurants so I just make it  here at home the way I like it and now you can also make it if you feel like. It is a simple pasta so I recommend using a cheese with stronger taste like parmesan. 

INGREDIENTS:
0,5 kg pasta
2 cloves of garlic
5-6 stripes ham or bacon
250 ml cream
1 egg
salt and pepper
your choice of cheese ( I used parmesan)


Add some salt to boiling water, and cook the pasta in it. In a large saucepan on a medium heat fry your garlic and then add the sliced ham or bacon and let it fry also. Pour in the cream and add salt and pepper. Let that simmer for a 0,5-1 minute and to make it thicker add 1 egg. Strain the cooked pasta and put it in the saucepan and mix together the sauce and the pasta. Let it fry for a few more minutes (I also like to save half a mug of the water that I made the pasta in and pour it in the saucepan, but this step is optional). Put the pasta on a plate and grate some parmesan cheese on top and you are done.

Ewe-cheese buns/baguette

This week's recipe has been one of my favourite dishes for a long time. My mom used to bake these baguettes for the family and I was always so excited for them. A few years ago I asked her to give me the recipe and I was so surprised when I found out how easy they actually were. Since then I made these so many times I can't even count.
I  even bake these if we have guests coming over because you can make lots of them in no time. 

You can use buns or baguettes for this recipe ( I used buns).  I made it with soft Ewe-cheese but if you can't find it in your country  blue cheese also works. 

INGREDIENTS: 
6 buns
300g of ewe-cheese / blue cheese (juhtúró)
100g of unsalted butter ( room temperature )
1 clove of a garlic
1 teaspoon of oregano

Preheat your oven to 180°C (350°F) .Get a bowl and mix together your cheese and your butter. Then add your chopped garlic and oregano. Take your buns and make three paralel cuts into them (cut them just until the middle) and fill these gaps with your cheese cream. Pack your buns in tinfoil completely, but leave a little whole on top. Bake them for 20 minutes then open the tinfoil and let the top of the buns bake for 5 more minutes. I served them with cherry tomatoes on the side, but it is great with any kind of fresh salads.
