Triple Chocolate Cookies

I've been waiting to share this next recipe with you guys for a long time and I think it is finally time! Everyone knows that chocolate cookies are heavenly, but what about a triple chocolate cookie? I make these cookies so often, firstly because I love making  and eating them and secondly, because people always ask me for them. A few days ago I made a big batch and they only lasted for about 7 minutes. :) My family and friends liked them so much that I made another batch right the next day. 

INGREDIENTS: 
150g flour
1,5 tablespoon of cocco powder
1 teaspoon of cinnamon 
90g dark chocolate
90g white chocolate
100g butter
130g caster sugar
1 egg

Line your baking sheet with parchment paper and preheat the oven to 170C (338°F). Mix the flour, coco powder and cinnamon in a bowl. Chop up your dark and white chocolate to smaller pieces and add them to the flour mixture as well. Mix the sugar and the melted butter with a whisk until it is well combined and then add the egg and mix that in as well. Fold together the flour and the egg mixture. Form little balls out of your dough, then place them on the baking sheet and bake in the oven for about 10 -13 minutes.

Hungarian Smarni

Back home I see my grandparents almost every day, but since we live so far away from them now we can only talk on the phone, skype or if they visit us. When I don't see them for a long time I miss them, I miss talking to them, eating all the delicious food my grandmother makes for us, talking to them, watching movies together...
I was so excited when they told me that they are coming to see us. I was counting the days with my sister. They have been here for nearly two weeks now and we have done so many things and one of them was that I made Hungarian "smarni" with my grandmother. Originally, this is an Austrian dish regularly made by Hungarians too, just a little differently. We like to eat this with apricot jam (which is also home-made by my grandmother) and it is heavenly !! 

INGREDIENTS
10 dkg semolina (búzadara) 
2,5 dl milk 
3 eggs
pinch of salt
orange zest
lemon zest
4 tbs of oil

optional:
caster sugar
raisins (mazsola) (the amount you prefer)
apricot jam


Start by separating the egg whites from the egg yolks. Mix the semolina, the milk and the egg yolks in the bowl, and let it sit for minimum an hour.  Pour some milk on the raisins in a cup (until it covers them) so they can soften. Beat the egg whites with a pinch of salt and add to the batter. Heat up 4 tablespoons of oil in a big pan, and pour in the batter (but make sure to turn it down to medium heat when you start frying the batter). Let one side fry like a thick pancake and then start folding it in half, and cutting it to little pieces with a wooden spatula. Repeat until the batter falls into little crumbles and get golden brown. When ready, grate some lemon and orange zest on it and also add your softened raisins. When it is done put it on a plate and optionally add a little bit of caster sugar on top (this is how I prefer this to be served) and also the apricot jam.









My grandparents are leaving soon and I am sad, because they have to go back to Hungary, so I won't see them for a while, but I am also happy, because it was so nice to see them and spend some time together.

Guilt free pancakes

I know what you are thinking " How can guilt free and pancakes be the title of this post at the same time?", well I'm glad to say this is actually possible. These two recipes are perfect if you want to pay attention to your figure or be healthier, but you don't want to miss out on a delicious dessert.
I find myself craving something sweet after a meal or on weekends when I stay up late and I want to snack on something while I'm watching a movie. This is when these pancakes are perfect, because  they are made from fruit and don't have added sugar. 

Apple pancakes:
1 apple (use sweet apple) 
1 egg
2 tablespoon of water
3 tablespoons of flour
cinnamon

Banana pancakes
1 banana
1 egg
cinnamon

decoration :
whipped cream
honey

These recipes both take a little more time, because you need to make them on a low heat so they don't burn, but they are so worth the time! 


1. pancake 
Peel your apple and put it in the blender with the egg,the water,the flour and some cinnamon and blend it well. It has to be thicker than the avarage pancake mixture. Heat up (on a low heat) some oil in your pan and make small circle shaped pancakes out of your batter (if you make them little it will be easier to flip them). You want the pancakes to be golden brown. For the topping I used whipped cream, but this is an optional step.


2. pancake 
Peel your banana and put it in the blender with the egg and some cinnamon. Remember, it has to be quite thick. Heat up (on a low heat) some oil in your pan and make small circle shaped pancakes out of your batter . For the topping I used honey (maple syrup is a great alternative) and some almonds, but again this step is optional.

Of course I cheated a little by putting whipped cream and honey on the pancakes, but you can leave those out, because they are sweet and delicious just as they are!

Arroz doce

For my first real Portuguese recipe, I decided to make arroz doce which is a delicious dessert. Whenever I go to a portuguese restaurant I always order this to finish a great meal. It is sweet and cinnamony. This recipe has a little bit of a twist, because I used 
sweetened condensed milk instead of sugar and I have no regrets, it tastes amazing. If you want to make a portuguese dessert, but you don't want something too complicated, then this is the recipe for you. Also if you come to Portugal you must try arroz doce. 


INGREDIENTS:
4 cups of water
2 tablespoons of butter
1/2 tablespoon  of salt
210g of rice
480 ml of milk
100g of sweetened condensed milk
4 egg yolks
cinnamon


Get a saucepan and bring your water, butter, salt to a boil. Then add the rice and on a medium to low heat let it cook for 25-30 minutes (until the rice cooks and absorbs the water), then add the warm milk (boil it a few minutes before). Let this cook for 5 more minutes and then add the sweetened condensed milk gradually while steering the mixture. In a separate bowl take your egg yolks and a few tablespoons of the rice mixture and quickly whisk them together so the eggs don't cook. Pour the mixtures back to the saucepan and let that simmer for another 5 minutes. Taste it and if you feel that it could be sweeter then add more of the sweetened condensed milk. Let it cool completely and put it in the fridge to chill and serve it with cinnamon on top.

Chocolate Pudding

Chocolate pudding is a delicious and chocolaty dessert that you can never get enough of. Personally, I love all desserts that involve chocolate, so a chocolate pudding is a perfect dessert for me. I know I'm not the only chocolate lover, so I want to show you an easy recipe which you can make whenever you feel like treating yourself to something sweet and tasty. My family loves it when I make this pudding, because they don't have to wait too long until it's ready and it is yummy either warm or cold. It is also great if you 
have  guests coming, because you can make it the day before and leave it in the fridge overnight and the next day you can enjoy a cold and heavenly dessert. 

INGREDIENTS:
80g of sugar
40 g of coco powder
3 tablespoons of flour
520 ml milk
90g dark chocolate 
4 egg yolks
vanilla extract


TO DECORATE:
peeled and sliced almonds
white chocolate


In a saucepan mix together the sugar, coco powder and flour. Then add the  milk and the chocolate, and start cooking it on a medium heat until everything is dissolved (don't worry if you have lumps in your pudding because we'll strane it). After that, remove from the heat. 
Next we are going to temper our eggs by taking a little bit of the chocolate mixture and adding it to the egg yolks while you are whisking them constantly (so that the eggs don't cook). Mix that well and pour it in the saucepan to the rest of the chocolate mixture. Then put the saucepan on a low heat and let it cook for 1,5-2 more minutes. Strane your mixture so there are no lumps. Pour your pudding into little cups and let them cool completely and put them in the fridge for a few hours or overnight. 
To decorate you can sprinkle some peeled and sliced almonds and some grated white chocolate on top of the pudding.

Waffle for breakfast

Waffles are the kind of treats that are good for breakfast, lunch, dinner or even a late night snack. I personally love making them because when I do the whole kitchen is filled with that sweet delicious smell. Don't even get me started on the toppings. There are so many choices to choose from. You can put jam, nutella, pudding, whipped cream or anything you want. I have a waffle recipe wich I use when ever I feel like making something quick and sweet.
I am going to share with you this recipe and some of the toppings wich I eat with waffles.

INGREDIENTS: 
2 eggs
2 tablespoon of sugar
a pinch of salt 
100 ml of sunflower oil 
150 ml of milk 
100 ml of water
250g of plain flour
1 and 1/2 teaspoon of baking powder

TOPPING:
confectioners sugar
honey and banana
blueberry jam
melted chocolate

First, beat the egg whites ( until they are fluffy) and add the sugar and salt gradually. Then mix this with the egg yolks, the oil, the milk and the water. In a separate bowl mix together the flour and baking powder. Fold together your wet and dry mixture. Preheat your waffle iron and brush it with a bit of butter. Then start adding your batter and bake each waffle until they are golden brown. Place your waffles on a plate and serve it with whatever topping you prefer.
